Jerk chicken recipe 500 cals


I LOVE jerk chicken, but thought I'd be saying goodbye to it when I started calorie counting as a portion was probably more than my daily calorie limit. I was very happy when I found that Amoy do a reduced fat coconut milk that can make this lovely meal for only 508 calories! I'm not a vegetarian, but I do love Quorn, and it's really helping to make all my usual recipes lower calorie. If you use proper chicken, the calories will go up by another 100 - you could have some chocolate for that!

For this recipe:
  • Use 75g of Quorn chicken style pieces (77 cal) and a spray of Fry Light (1 cal) and heat the pieces through.
  • Use a teaspoon of Dunn's River Jamaican Jerk Seasoning or more if you like it really spicy, there are no calories! 
  • Mix in 100ml Amoy Reduced Fat Coconut Milk (116 cal) with the Quorn and let the seasoning work. It should turn a light brown colour when mixed together. 
  • Add peas (47 cal) and kidney beans (97 cal) and simmer until heated through.
  • Serve with Tilda Brown Basmati Rice (170 cal), or mix it together in the pan like I did to soak up the coconut milk.
And there we have it, gorgeous, healthier thank you think, jerk 'chicken' - yum!

300 Calorie Pizza + Weight Loss Update

It's day 1 of week 3 and I've lost 7lbs so far! I've started going swimming with my housemates and started kettlebell training. Sadly I bought an 8kg bell and can't do anything that involves one hand so have had to downgrade to a 4.5kg bell, just waiting for the ever reliable (!) Yodel couriers to deliver it from Amazon.

Does anyone else use Kettlebells?

Here's what I had for lunch earlier.

A pizza for only 300 calories (well, a 319...), it must taste crap surely? No actually, it tastes delicious!


My choice of  topping was chicken, mushroom and sweetcorn. It's so easy to make, just follow these simple steps:

  • Take a tortilla wrap, I use WeightWatchers, 106 calories. You may want to crisp it in a frying pan with a spray of Fry Light to make it a little sturdier.
  • Smother a teaspoon of tomato puree all over the wrap, starting from the middle and working your way outwards (There wasn't even 10 calories in the one I used so not counting this).
  • Add 20g grated cheese, I used Kerry LowLow cheese, 60 calories.
  • Add topping of your choice. I used Tesco frozen chicken breast (135 cal), sliced mushrooms in water (9 calories) and sweetcorn (9 cal). 
  • Stick it under the grill for about 4 minutes, until the cheese has melted and the toppings are heated through, et voila, a tasty pizza for only 319 calories! 
Of course, you can choose whatever you want as a topping, but obviously the calorie content will change. Another note that 20g of cheese when cut from a block looks like nothing, but when grated it was more than enough to cover the whole pizza.

Diet blog

Long time no see! I've somehow managed to gain followers despite not posting for the last 6 months... I'm changing this blog to document my diet and fitness and hopefully my success in later months.

I've finally taken it upon myself to actually do something about my weight, which has gone up by about 2 stone in as many years. I've tried the Dukan Diet (Google it, but I wouldn't recommend trying it) and had success but got very sick of basically just eating chicken and cottage cheese every day.

This time round I've finally found a 'diet' that I will actually stick to, because I can eat whatever I want and still lose weight! Seriously?! I hear you cry, tell me your secret! Well, it's hardly a secret, it's just a simple thing called calorie counting. After discovering calorie counting on MiniMins, a weight loss and fitness forum, I decided this is definitely for me! With help from calorie counting app MyFitnessPal, it's very easy to follow and you can still incorporate the odd chocolate bar and takeaway in it, as long as they fit in with your daily calorie limit!

I'm on week 2 now, with a starting weight of 196lbs (14 stone! FML.) and a current weight of 192lbs and aim to get into some size 12/32in waist denim shorts in time for my holiday to Crete at the end of May!

Operation Size 12 Shorts is on. I will keep updates on inches, lbs and food ideas in coming weeks and hope that you see alot more of me, or should I say alot less???
