I LOVE jerk chicken, but thought I'd be saying goodbye to it when I started calorie counting as a portion was probably more than my daily calorie limit. I was very happy when I found that Amoy do a reduced fat coconut milk that can make this lovely meal for only 508 calories! I'm not a vegetarian, but I do love Quorn, and it's really helping to make all my usual recipes lower calorie. If you use proper chicken, the calories will go up by another 100 - you could have some chocolate for that!
For this recipe:
- Use 75g of Quorn chicken style pieces (77 cal) and a spray of Fry Light (1 cal) and heat the pieces through.
- Use a teaspoon of Dunn's River Jamaican Jerk Seasoning or more if you like it really spicy, there are no calories!
- Mix in 100ml Amoy Reduced Fat Coconut Milk (116 cal) with the Quorn and let the seasoning work. It should turn a light brown colour when mixed together.
- Add peas (47 cal) and kidney beans (97 cal) and simmer until heated through.
- Serve with Tilda Brown Basmati Rice (170 cal), or mix it together in the pan like I did to soak up the coconut milk.
And there we have it, gorgeous, healthier thank you think, jerk 'chicken' - yum!
